Caprese Salad

This is one of my go to for lunches all year round!!!! I have found an amazing olive oil and balsamic vinegar shop that is local to me, if you are in the Phoenix area go check out Tree of Oil, I love their Neapolitan Herb balsamic vinegar and Garlic Olive Oil, those are two that are featured in this recipe.

Ingredients:

1/4 c Neapolitan Herb Balsamic Vinegar (or your favorite Balsamic Vinegar)
1/4 c Garlic Olive Oil (or plain Jane Olive Oil works too)
3 sprigs of Fresh Basil, chopped
1 T of Honey (local is the best)
4 slices of fresh mozzarella, small dice
3 Roma tomatoes, small dice
2 T red onion, small dice
10 deli slices of your favorite salami
Salt & Pepper to Taste
Cooked Pasta (optional)

Let’s make the dressing, I do this in a mason jar best it makes it super easy to mix up. I put the vinegar, olive oil, basil, honey, and salt & pepper to taste in the mason jar and shake it up!!!

Once the dressing is made it is time for the salad. The rest of the ingredients into a bowl and add half of the dressing, you can also add pasta to this salad to make it into more of a nice summer meal. Mix it all together and you are done!!!  You can eat it now or let it sit for a few hours to meld the flavors together!!!

This is a very tasty summer salad, and here in Phoenix I eat it all year round. It is a favorite even with my youngest 🙂  We could get salami every day in this house, oh wait we do!!!
